Don’t you LOVE recipes that are: yummy, easy and quick to make… and healthy is good too!
This recipe matches that criteria and is one of my family’s favorites, especially in the Summer.
I originally found this recipe on the www.Publix.com (grocery store chain) website (“Apron’s Meals”). Like everyone else, I tweak my recipes to suit my taste, but this one stays pretty close to the original and garners me TONS of compliments every time I make it.

Watch for sales, in your grocery store, on organic chicken tenders/tenderloins. Wash, dry, season & brown the chicken, using a small amount of butter, olive oil or any other healthy oil you prefer…. organic coconut oil is good too.
Remove the browned (thoroughly cooked chicken) onto a plate and add the green onions, cumin & garlic.
If it seems too dry, add a little water while cooking.
Add the juice of a fresh lime (I use the entire lime) and use a spoon to break up the pulp, to extract the maximum amount of juice.
I like to grind the remaining lime peel in the garbage disposal (to make it smell nice) or add it to your compost pile.
Add the coconut milk (there is also a “lite” coconut milk) and kosher salt… mix well & simmer.
Place the chicken back in the pan and mix well.
In less than 30 minutes, you’ll have a YUMMY dish your family will love. Serve over your favorite rice, alongside your favorite veggie.
Want to add in more texture? Try mushrooms, asparagus, capers, etc.
